How To Make Lentil and Vegetable Stir-Fry

Serves:

Ingredients

  • 1 cup dry lentils, rinsed
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chopped kale
  • 2 tbsp soy sauce
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring lentils and vegetable broth to a boil. Reduce heat and simmer for 15-20 minutes until tender. Drain and set aside.

  2. In a large skillet, heat olive oil over medium-high heat. Add bell pepper, onion, and garlic and sauté for 3-4 minutes until tender.

  3. Add chopped kale and sauté for another 2-3 minutes until wilted.

  4. Add cooked lentils, soy sauce, cumin, paprika, salt, and pepper to the skillet. Stir to combine and cook for an additional 3-4 minutes until heated through.

  5. Serve hot and enjoy!
