Serves:

Ingredients

  • 2 cups chopped spinach
  • 2 cups cauliflower florets
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, slit
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • salt to taste
  • 2 tbsp oil
  • fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them crackle.

  2. Add onions and green chilies. Saute until onions turn translucent.

  3. Add tomatoes and cook until they become soft and mushy.

  4. Add turmeric powder, red chili powder, and salt. Mix well.

  5. Add cauliflower florets and cook for 5 minutes, until they are slightly tender.

  6. Add chopped spinach and cook until wilted.

  7. Sprinkle garam masala and mix well.

  8. Cook for another 2-3 minutes.

  9. Garnish with fresh coriander leaves.

  10. Serve hot with roti or rice.
