A refreshing and crunchy salad with the perfect blend of chicken, water chestnuts, and vegetables.

Ingredients

  • 2 chicken breasts, cooked and diced
  • 1 can of water chestnuts, drained and chopped
  • 1 red bell pepper, diced
  • 1 carrot, peeled and shredded
  • 1 green onion, chopped
  • 1/4 cup of chopped cilantro
  • 1/4 cup of unsalted peanuts
  • 2 tbsp of rice vinegar
  • 1 tbsp of soy sauce
  • 1 tbsp of honey
  • 1 garlic clove, minced
  • 1 tsp of grated ginger
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the cooked chicken, water chestnuts, red bell pepper, carrot, green onion, and cilantro.

  2. In a small bowl, whisk together the rice vinegar, soy sauce, honey, garlic, ginger, salt, and pepper.

  3. Pour the dressing over the chicken mixture and toss to coat evenly.

  4. Garnish with chopped peanuts.

  5. Serve chilled.
