These tasty vegetarian and dairy-free cucumber boats are refreshing meals! They’re filled with hummus, avocado, tomatoes, and a squeeze of fresh lemon.

  • 1cucumber,cut in half lengthwise
  • 6tbsphummus
  • ¼cupcarrots,shredded
  • ¼cupsprouts
  • ¼cuptomato
  • ¼cupred onion
  • 3ozhass avocado,(from ½ medium avocado), sliced
  • 1fresh lemon wedge,squeezed
  • kosher salt and pepper,to taste

Instructions

  1. Scoop the seeds out of a cucumber using a metal measuring spoon.

  2. Fill each boat with 3 tablespoons of hummus.

  3. Top with the remaining vegetables, and finish with salt, pepper, and lemon juice.

  4. Serve, and enjoy!
