How To Make Sweet Potato & Orange Mash with Sage Butter Drizzle

Ingredients
- 4 medium sweet potatoes, peeled and cubed
- 2 oranges, zest and juice
- 4 tbsp butter
- 2 tbsp fresh sage, chopped
- Salt and pepper to taste
Instructions

Place the sweet potato cubes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes.

Drain the sweet potatoes and return them to the pot. Add the orange zest, half of the orange juice, and butter. Mash until smooth and creamy. Season with salt and pepper to taste.

In a small saucepan, melt the remaining butter over medium heat. Add the chopped sage and cook until fragrant, about 2 minutes. Remove from heat and stir in the remaining orange juice.

Serve the sweet potato mash in serving bowls and drizzle with the sage butter mixture.
