Instructions

  1. Wash the beet greens thoroughly and remove any tough stems. Chop the leaves into bite-sized pieces.

  2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

  3. Add the beet greens to the skillet and sauté for 5-7 minutes until wilted.

  4. Add lemon juice and season with salt and pepper to taste.

  5. Cook for an additional 2-3 minutes until the flavors have melded together.
