Ingredients

  • 2 lbs potatoes, cut into bite-sized pieces
  • 1 lb Brussels sprouts, trimmed and halved
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the potatoes and Brussels sprouts with olive oil, garlic, thyme, salt, and pepper until well coated.

  3. Spread the vegetables on a baking sheet in a single layer.

  4. Roast in the preheated oven for about 25 minutes, or until the potatoes are golden and crispy, and the Brussels sprouts are tender.

  5. Serve hot and enjoy!
