Serves:
Ingredients
- 2 cups couscous
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- 1 carrot, peeled and diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 cup chickpeas, drained and rinsed
- 1/4 cup raisins
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
-
In a large bowl, pour the couscous and 1 cup of vegetable broth. Stir it well and let it absorb for 10 minutes.
-
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent.
-
Add the cumin, coriander, turmeric, cinnamon, and cayenne pepper to the skillet. Stir to coat the onions and garlic with the spices.
-
Add the diced carrot, zucchini, and red bell pepper to the skillet. Cook for 5 minutes or until the vegetables are slightly tender.
-
Add the chickpeas, raisins, and remaining 1 cup of vegetable broth to the skillet. Bring it to a boil and then reduce the heat to low. Simmer for 15 minutes.
-
Fluff the couscous with a fork and add it to the skillet. Stir well to combine all the ingredients. Season with salt and pepper to taste.
-
Cover the skillet and let it simmer for another 5 minutes, allowing the flavors to meld together.
-
Remove from heat and sprinkle chopped fresh parsley over the couscous before serving.
