Serves:

Ingredients

  • 2 cups couscous
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 carrot, peeled and diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup chickpeas, drained and rinsed
  • 1/4 cup raisins
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large bowl, pour the couscous and 1 cup of vegetable broth. Stir it well and let it absorb for 10 minutes.

  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent.

  3. Add the cumin, coriander, turmeric, cinnamon, and cayenne pepper to the skillet. Stir to coat the onions and garlic with the spices.

  4. Add the diced carrot, zucchini, and red bell pepper to the skillet. Cook for 5 minutes or until the vegetables are slightly tender.

  5. Add the chickpeas, raisins, and remaining 1 cup of vegetable broth to the skillet. Bring it to a boil and then reduce the heat to low. Simmer for 15 minutes.

  6. Fluff the couscous with a fork and add it to the skillet. Stir well to combine all the ingredients. Season with salt and pepper to taste.

  7. Cover the skillet and let it simmer for another 5 minutes, allowing the flavors to meld together.

  8. Remove from heat and sprinkle chopped fresh parsley over the couscous before serving.
