  • 1cupvinegar
  • ½cupwater
  • 1ozvegetable oil
  • ¼tspwhite sugar
  • ¼tspsalt
  • ¼tspground black pepper
  • 2bulbskohlrabi,peeled, sliced into ¼-inch half moons


  1. Whisk the vinegar, water, vegetable oil, sugar, salt, and pepper together in a bowl until the solids are completely dissolved into the liquid.

  2. Add kohlrabi to the liquid, and marinate overnight or up to 12 hours.

  3. Pour into a saucepan and cook over medium heat for about 25 minutes until the kohlrabi is tender.

  4. Set aside to cool completely before eating.
