  • 16 squash blossoms
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 cup sparkling water
  • Vegetable oil for frying

Instructions

  1. Gently rinse the squash blossoms and remove the stems and pistils. Pat dry with paper towels.

  2. In a bowl, mix together ricotta cheese, Parmesan cheese, basil, sun-dried tomatoes, salt, and black pepper.

  3. Carefully stuff each squash blossom with a teaspoon of the filling mixture, gently twisting the petals to enclose the filling.

  4. In a deep frying pan, heat vegetable oil over medium heat.

  5. In a separate bowl, whisk together all-purpose flour and sparkling water until smooth. Dip each stuffed squash blossom into the batter, allowing any excess to drip off.

  6. Fry the stuffed squash blossoms in the hot oil until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

  7. Serve the fried stuffed squash blossoms hot and enjoy!
