Ingredients

  • 1 lb pearl onions, peeled
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Bring a pot of water to a boil and add the pearl onions. Boil for 5 minutes, then drain and set aside.

  2. In a large skillet, melt the butter over medium heat. Add the flour and whisk until smooth. Cook for 1 minute.

  3. Slowly pour in the milk, whisking constantly to avoid lumps. Cook until the sauce thickens.

  4. Add the boiled pearl onions to the skillet and stir to coat them with the sauce. Season with salt and pepper.

  5. Reduce the heat to low and simmer for 15-20 minutes, or until the onions are tender.

  6. Serve the creamed onions hot, garnished with chopped fresh parsley.
