
How To Make Easy Cauliflower Ceviche
This Mexican style cauliflower ceviche tossed with carrots, tomatoes, and cilantro brings forth a burst of flavor. Best paired with crackers or guac.

Ingredients
- 1large head cauliflower
- 4small carrots,peeled and finely chopped
- 3large plum tomatoes,seeded and chopped
- 1small white onion,finely chopped
- 8sprigscilantro,chopped
- 1½limes,juiced
- salt,to taste
- 1avocado,peeled, pitted, and sliced
Instructions

Place a steamer insert into a saucepan and fill with water just below the bottom of the steamer.

Bring water to a boil. Add cauliflower, cover, and steam for 7 minutes. Let cool and finely chop.

Place chopped cauliflower, carrots, tomatoes, onion, and cilantro in a bowl. Pour lime juice on top and season with salt.

Cover and chill for at least 30 minutes. Serve garnished with avocado slices.
