Ingredients

  • 1 pound of carrots, peeled and cut into 1-inch pieces
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).

  2. In a large bowl, toss the carrots with olive oil, cumin, salt, and black pepper until they are well coated.

  3. Spread the carrots in a single layer on a baking sheet.

  4. Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and caramelized, stirring once halfway through.

  5. Remove from the oven and serve hot.
