My favorite quick and easy vegetable side dish to make is this delicious carrots and peas recipe of mine. Every time I make a hefty meal for my whole family, I always make sure the entrees have an accompanying side dish to balance everything out. I made some of these buttery peas and carrots alongside a delicious lemon roasted chicken. It was a really good and satisfying meal that my family and I enjoyed. I really think the buttered peas and carrots helped add depth and flavor to our main course.

That’s why I’m glad to be sharing this 5-minute carrots and peas recipe with you. What’s great about this recipe is that it doesn’t need any direct heat from the stove. I made mine using a microwave, and it tasted just as delicious. It also saves a lot of cooking and preparation time. Other recipes would require you to boil carrots and peas, but my recipe doesn’t need that!

I simply place the sliced carrots in a microwave safe glass or bowl with a little bit of water, and cover it with a wet paper towel. This will allow the carrots to soften while they’re being heated in the microwave for 3 minutes. You can use regular sized or baby carrots for this recipe. Next, I added the frozen peas, lightly seasoned it with salt pepper, and then heated them again for another 2 minutes. I used frozen peas, but feel free to use a can of peas if you have one.

By this time, the frozen peas and carrots were heating up and blending quite nicely. After that, I drained any remaining water left from the peas in the bowl and then added the butter. Since the vegetables were still hot, the butter melted and coated the peas and carrots delicately. It’s best to eat these while they’re still warm to enjoy the delicious combination of butter with the peas and carrots.

If you want to put a little fancier spin to this, try including some fresh basil leaves. The herby flavor will add more depth to the buttery taste. Or, mix them in with more vegetables like broccoli florets and turnips to make a vegetable medley!

Ingredients

  • ½lbcarrots,peeled, sliced into ¼-inch thick slices on a bias
  • 2cupsfrozen sweet green peas
  • kosher salt and pepper
  • 2tbspunsalted butter

Instructions

  1. Add the sliced carrots to a microwave safe glass bowl that’s slightly wet.

  2. Cover with a wet paper towel, then tuck the towel into the bowl around the edges.

  3. Microwave for 3 minutes.

  4. Uncover, then add in the peas. Stir to combine.

  5. Add the Kosher salt and pepper to taste.

  6. Microwave for an additional 2 minutes, uncovered.

  7. Over a sink, tilt the bowl to drain any liquid the frozen peas released.

  8. Add the butter, then stir to coat.

  9. Serve warm, and enjoy!
