Ingredients

  • 1 butternut squash, peeled and diced
  • 500g lamb, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the grill to high heat. Place the diced butternut squash on a baking sheet and drizzle with olive oil. Season with salt and pepper.

  2. Grill the squash for 10-15 minutes, flipping occasionally, until charred and tender.

  3. Meanwhile, heat a skillet over medium heat. Add the minced lamb and cook until browned.

  4. Add the cumin, coriander, paprika, salt, and pepper to the lamb. Cook for an additional 5 minutes, until fragrant.

  5. Serve the spiced lamb over the charred squash. Garnish with fresh mint leaves.
