  • 8 spring onions
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 cup roasted red peppers
  • 1/4 cup almonds
  • 2 cloves garlic
  • 2 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • Fresh parsley, for garnish


  1. Preheat grill or grill pan over medium-high heat.

  2. Trim the roots and tops of the spring onions, leaving about 4 inches of the green stems intact.

  3. Brush the spring onions with olive oil and season with salt and pepper.

  4. Grill the onions for about 3-4 minutes per side, or until charred and tender.

  5. Meanwhile, in a blender or food processor, combine the roasted red peppers, almonds, garlic, red wine vinegar, and olive oil. Blend until smooth.

  6. Arrange the grilled spring onions on a serving platter and drizzle with the romesco sauce.

  7. Garnish with fresh parsley and serve hot.
