Ingredients
- 8 spring onions
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 cup roasted red peppers
- 1/4 cup almonds
- 2 cloves garlic
- 2 tablespoons red wine vinegar
- 1/4 cup olive oil
- Fresh parsley, for garnish
Instructions

Preheat grill or grill pan over medium-high heat.

Trim the roots and tops of the spring onions, leaving about 4 inches of the green stems intact.

Brush the spring onions with olive oil and season with salt and pepper.

Grill the onions for about 3-4 minutes per side, or until charred and tender.

Meanwhile, in a blender or food processor, combine the roasted red peppers, almonds, garlic, red wine vinegar, and olive oil. Blend until smooth.

Arrange the grilled spring onions on a serving platter and drizzle with the romesco sauce.
