Ingredients

  • 1 large head of broccoli, cut into florets
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 slices of bread
  • 1/2 cup roasted red peppers
  • 1/4 cup almonds
  • 2 cloves of garlic
  • 1 tbsp tomato paste
  • 1 tbsp red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large mixing bowl, toss the broccoli florets with olive oil, salt, and pepper until well coated.

  3. Spread the broccoli in a single layer on a baking sheet and roast for 15-20 minutes, or until charred and crispy.

  4. While the broccoli is roasting, toast the bread slices until golden and crispy.

  5. In a food processor, combine the roasted red peppers, almonds, garlic, tomato paste, red wine vinegar, olive oil, salt, and pepper. Blend until smooth and creamy.

  6. Spread a generous amount of the romesco sauce onto each slice of toasted bread.

  7. Top the romesco toast with the charred broccoli florets.

  8. Serve immediately and enjoy!
