How To Make Charred broccoli & cheat’s romesco toast

Ingredients
- 1 large head of broccoli, cut into florets
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 slices of bread
- 1/2 cup roasted red peppers
- 1/4 cup almonds
- 2 cloves of garlic
- 1 tbsp tomato paste
- 1 tbsp red wine vinegar
- 1/4 cup olive oil
- Salt and pepper, to taste
Instructions

Preheat the oven to 425°F (220°C).

In a large mixing bowl, toss the broccoli florets with olive oil, salt, and pepper until well coated.

Spread the broccoli in a single layer on a baking sheet and roast for 15-20 minutes, or until charred and crispy.

While the broccoli is roasting, toast the bread slices until golden and crispy.

In a food processor, combine the roasted red peppers, almonds, garlic, tomato paste, red wine vinegar, olive oil, salt, and pepper. Blend until smooth and creamy.

Spread a generous amount of the romesco sauce onto each slice of toasted bread.

Top the romesco toast with the charred broccoli florets.
