Ingredients

  • 2 cups Brussels sprouts, trimmed and halved
  • 2 cups carrots, peeled and sliced
  • 2 cups bell peppers, sliced
  • 1 red onion, cut into wedges
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, combine the Brussels sprouts, carrots, bell peppers, red onion, and garlic.

  3. Drizzle the olive oil and balsamic vinegar over the vegetables. Sprinkle with thyme, salt, and pepper. Toss to coat evenly.

  4. Spread the vegetables in a single layer on a baking sheet.

  5. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and lightly browned, stirring once halfway through.

  6. Serve the balsamic-roasted vegetables hot as a flavorful side dish.
