Ingredients

  • 2 large zucchini
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Slice the zucchini into thin rounds, about 1/4 inch thick.

  3. In a shallow bowl, whisk the eggs until well beaten.

  4. In a separate shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper.

  5. Dip each zucchini round into the beaten eggs, then coat it with the breadcrumb mixture. Press the mixture onto both sides of the zucchini to help it adhere.

  6. Place the coated zucchini rounds onto the prepared baking sheet in a single layer, making sure they don’t touch.

  7. Bake for 12-15 minutes, or until the zucchini chips are golden brown and crispy.

  8. Remove from the oven and let cool for a few minutes before serving.
