How To Make Chopped Greek Salad

Get your palate ready for the strong and fragrant flavors in this chopped Greek salad dish that is made with cherry tomatoes, olives, and fresh Feta cheese.

Ingredients

For Greek Salad:

  • 10ozchopped romaine lettuce,(about 2 medium or 3 small heads), chopped
  • 2cupscherry tomatoes,quartered
  • 8ozcucumber,(1 medium), seeded and chopped
  • 1bell pepper,yellow or orange
  • 1cupred onion,(½ medium), chopped
  • ½cupfresh parsley,chopped
  • ½cupkalamata olives,pitted and halved
  • 6ozfeta cheese,(about 1¼ cups) sliced into ¼-inch cubes

For Greek Vinaigrette:

  • ½cupextra-virgin olive oil
  • ¼cupred wine vinegar
  • 2clovesmedium garlic,pressed or minced
  • 2tspdried oregano
  • 1tsphoney,or maple syrup
  • ½tspsalt,more to taste
  • pinchred pepper flakes,for heat, optional

Instructions

Greek Salad:

  1. In a large serving bowl, combine the chopped lettuce, tomatoes, cucumber, pepper, onion, parsley, olives and feta. Toss the ingredients together and set aside.

Greek Vinaigrette:

  1. To prepare the vinaigrette, combine all of the ingredients in a liquid measuring cup or to a dressing mixer.

  2. Whisk until blended. Taste, and add more vinegar for more tangy dressing, or more honey for a more tame dressing.

  3. Drizzle enough dressing to the salad.

  4. Serve and enjoy.
