Ingredients

  • 8 oz spaghetti
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup chopped red bell pepper
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • Salt and pepper to taste

Instructions

  1. Cook spaghetti according to package instructions. Drain and rinse with cold water.

  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger.

  3. In a large bowl, combine cooked spaghetti, shredded carrots, cucumber, red bell pepper, green onions, and cilantro.

  4. Pour the dressing over the pasta and vegetables. Toss to combine.

  5. Season with salt and pepper to taste. Sprinkle chopped peanuts on top.

  6. Serve chilled and enjoy!
