Ingredients

  • 1 cup of rice
  • 1 1/2 cups of water
  • 1/2 cup of cherry tomatoes, halved
  • 1/2 cup of cucumber, diced
  • 1/2 cup of bell peppers, diced
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of black olives, sliced
  • 2 tablespoons of fresh parsley, chopped
  • 2 tablespoons of fresh basil, chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of red wine vinegar
  • Salt and pepper, to taste

Instructions

  1. Cook the rice according to package instructions. Once cooked, let it cool completely.

  2. In a large bowl, combine the cooled rice, cherry tomatoes, cucumber, bell peppers, red onion, black olives, parsley, and basil.

  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Pour the dressing over the rice mixture and toss until well combined.

  4. Allow the salad to sit in the refrigerator for at least 1 hour to let the flavors meld together.

  5. Serve chilled and enjoy!
