How To Make Quinoa, Beet, and Arugula Salad

Serves:

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 medium beets, roasted and diced
  • 4 cups arugula
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, bring water to a boil. Add quinoa and reduce heat to low. Cover and simmer for 15-20 minutes until the quinoa is cooked and the water is absorbed.

  2. In a large mixing bowl, combine cooked quinoa, roasted beets, arugula, feta cheese, and walnuts.

  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the salad and toss to combine.

  4. Serve the salad chilled or at room temperature.
