How To Make Quinoa, Beet, and Arugula Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 2 medium beets, roasted and diced
- 4 cups arugula
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

In a medium saucepan, bring water to a boil. Add quinoa and reduce heat to low. Cover and simmer for 15-20 minutes until the quinoa is cooked and the water is absorbed.

In a large mixing bowl, combine cooked quinoa, roasted beets, arugula, feta cheese, and walnuts.

In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the salad and toss to combine.

Serve the salad chilled or at room temperature.
