
How To Make Asian Potato Salad

Ingredients
- 4 medium potatoes, peeled and cubed
- 1 cucumber, peeled and diced
- 1 carrot, shredded
- 4 green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- Salt and pepper to taste
Instructions

In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until fork-tender, about 15-20 minutes. Drain and let cool.

In a mixing bowl, combine the cooked potatoes, cucumber, carrot, green onions, and cilantro.

In a separate smaller bowl, whisk together the mayonnaise, soy sauce, rice vinegar, sesame oil, sugar, salt, and pepper until well combined.

Pour the dressing over the potato mixture and gently toss until everything is evenly coated.

Refrigerate for at least 1 hour to allow the flavors to meld together.
