How To Make Broccoli and Tortellini Salad

Ingredients
- 9 oz package of cheese tortellini
- 2 cups broccoli florets
- 1/4 cup red onion, thinly sliced
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- 1/4 cup sliced almonds
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- Salt and pepper to taste
Instructions

Cook the tortellini according to package instructions. Drain and set aside.

In a large bowl, combine the cooked tortellini, broccoli florets, red onion, sun-dried tomatoes, Parmesan cheese, and sliced almonds.

In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

Drizzle the dressing over the salad and toss gently to combine.
