Ingredients

  • 9 oz package of cheese tortellini
  • 2 cups broccoli florets
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sliced almonds
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and set aside.

  2. In a large bowl, combine the cooked tortellini, broccoli florets, red onion, sun-dried tomatoes, Parmesan cheese, and sliced almonds.

  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.

  4. Drizzle the dressing over the salad and toss gently to combine.

  5. Serve chilled and enjoy!
