Ingredients

  • 2 cups elbow macaroni
  • 1/2 cup mayonnaise
  • 2 tbsp vinegar
  • 1 tbsp dijon mustard
  • 2 stalks celery, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 2 hard-boiled eggs, chopped
  • 1/4 cup sweet pickle relish
  • salt and pepper to taste

Instructions

  1. Cook macaroni according to package instructions. Drain and set aside to cool.

  2. In a large bowl, whisk together mayonnaise, vinegar, and dijon mustard until well combined.

  3. Add cooked macaroni, celery, red bell pepper, red onion, hard-boiled eggs, and sweet pickle relish to the bowl. Toss until everything is coated in the dressing.

  4. Season with salt and pepper to taste.

  5. Refrigerate for at least 1 hour before serving to allow flavors to blend.
