How To Make Quick and Easy Kimchi Salad

Ingredients
- 2 cups shredded Napa cabbage kimchi
- 1 cucumber, sliced
- 1 carrot, julienned
- 1/2 red onion, thinly sliced
- 2 green onions, chopped
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon red pepper flakes (optional)
Instructions

In a large bowl, combine the kimchi, cucumber, carrot, red onion, and green onions.

In a small bowl, whisk together the sesame oil, rice vinegar, sugar, salt, and red pepper flakes (if using).

Pour the dressing over the vegetables and toss to combine.

Let the salad marinate in the refrigerator for at least 10 minutes before serving.
