Ingredients

  • 1 can of black beans, drained and rinsed
  • 1 cup of corn kernels
  • 1 cup of cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup of chopped cilantro
  • 1 avocado, diced
  • 1/2 cup of shredded cheddar cheese
  • 1/4 cup of sour cream
  • 1/4 cup of salsa
  • 1/4 cup of lime juice
  • 1 tsp of chili powder
  • 1 tsp of cumin
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Instructions

  1. In a large bowl, combine the black beans, corn, tomatoes, red onion, cilantro, avocado, and cheddar cheese.

  2. In a small bowl, mix together the sour cream, salsa, lime juice, chili powder, cumin, salt, and pepper.

  3. Pour the dressing over the black bean mixture and toss to coat everything evenly.

  4. Serve the salad on a bed of tortilla chips and garnish with additional cilantro, if desired. Enjoy!
