How To Make Easy Quinoa and Edamame Salad Recipe

  • 1 cup quinoa
  • 1 ½ cups water
  • 1 cup shelled edamame
  • 1 red bell pepper, diced
  • ½ cup diced cucumber
  • ¼ cup chopped red onion
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • salt and pepper to taste


  1. In a medium saucepan, bring water to a boil. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes or until the water is absorbed and the quinoa is tender. Remove from heat and let it cool.

  2. In a large bowl, combine the cooked quinoa, edamame, red bell pepper, cucumber, red onion, and cilantro.

  3. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper. Pour the dressing over the quinoa mixture and toss until well coated.

  4. Serve chilled and enjoy!
