Ingredients

  • 1 lb octopus, cleaned and boiled
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, sliced
  • 1/2 bell pepper, sliced
  • 1/4 cup pitted Kalamata olives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 tbsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Preheat grill to high heat.

  2. Grill octopus for 2-3 minutes per side, until char marks are visible. Cut into bite-sized pieces.

  3. In a large bowl, combine octopus, red onion, cucumber, bell pepper, olives, and parsley.

  4. In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.

  5. Pour dressing over salad and toss to coat.

  6. Serve chilled.
