  • 2 cups of diced tomatoes

  • 1 cup of diced red onions
  • 1 cup of diced green bell peppers
  • 1 cup of sliced kalamata olives
  • 1 cup of crumbled feta cheese
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of fresh lemon juice
  • 1 tablespoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the tomatoes, cucumbers, red onions, bell peppers, kalamata olives, and feta cheese.

  2. In a separate small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.

  3. Pour the dressing over the salad and toss to coat evenly.

  4. Serve immediately or refrigerate for later.
