How To Make Vegan Sausage Casserole
A hearty and flavorful dish made with vegan sausages, vegetables, and a savory tomato sauce.

Ingredients
- 1 tbsp olive oil
- 4 vegan sausages
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup mushrooms, sliced
- 1 can (14 oz) diced tomatoes
- 1 cup vegetable broth
- 1 tsp dried thyme
- 1 tsp paprika
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Heat the olive oil in a large pan over medium heat. Add the vegan sausages and cook until browned. Remove from pan and set aside.

In the same pan, add the onion and garlic. Cook until translucent.

Add the red bell pepper, zucchini, and mushrooms to the pan. Cook until vegetables are slightly softened.

Add the diced tomatoes, vegetable broth, dried thyme, paprika, smoked paprika, salt, and pepper. Stir well.

Slice the cooked vegan sausages and add them back into the pan. Simmer for 20 minutes.

Preheat the oven to 350°F (175°C).

Transfer the sausage mixture to a casserole dish and bake for 15 minutes.

Garnish with fresh parsley before serving.
