Serves:

Ingredients

  • 1.5 pounds small potatoes
  • 4 cloves of garlic, minced
  • 2 tablespoons fresh lemon juice
  • 2 sprigs of fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. In a large pot, add the potatoes, garlic, lemon juice, thyme, salt, and pepper.

  2. Fill the pot with enough water to cover the potatoes.

  3. Bring to a boil over high heat, then reduce the heat to medium-low and simmer for 20-25 minutes, or until the potatoes are tender when pierced with a fork.

  4. Drain the potatoes in a colander and return them to the pot.

  5. Add the butter to the pot and gently toss the potatoes until the butter is melted and evenly coated.

  6. Transfer the potatoes to a serving dish and garnish with chopped fresh parsley.

  7. Serve hot and enjoy!
