Ingredients

  • 1 large red onion, thinly sliced
  • 8 radishes, thinly sliced
  • 1 cup white vinegar
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1 teaspoon salt

Instructions

  1. In a small saucepan, combine the white vinegar, water, sugar, and salt. Bring to a boil.

  2. Remove from heat and let the mixture cool for a few minutes.

  3. Place the sliced red onion and radishes in a glass jar or container.

  4. Pour the vinegar mixture over the vegetables, making sure they are completely covered.

  5. Let the pickled vegetables sit at room temperature for at least 30 minutes to allow the flavors to develop.

  6. Once cooled, store the pickled red onion & radish in the refrigerator for up to 2 weeks.

  7. Serve as a topping for tacos, salads, sandwiches, or enjoy as a tangy side dish.
