Ingredients

  • 1 lb chicken livers
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup balsamic vinegar
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken livers and cook until browned on each side, about 5-7 minutes.

  2. Sprinkle salt and black pepper over the cooked chicken livers.

  3. In a large bowl, combine salad greens, cherry tomatoes, red onion, balsamic vinegar, and olive oil. Toss well to coat.

  4. Divide the salad mixture onto four plates.

  5. Top each plate with cooked chicken livers.

  6. Sprinkle crumbled goat cheese and fresh parsley over the top.

  7. Serve warm and enjoy!
