Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups sugar snap peas, trimmed
  • 1 tablespoon unsalted butter

Instructions

  1. In a large bowl, combine lemon juice, olive oil, garlic, thyme, salt, and black pepper. Add chicken breasts and toss to coat. Let marinate for 10 minutes.

  2. Heat a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side, or until cooked through and no longer pink in the center. Remove from skillet and set aside.

  3. In the same skillet, add sugar snap peas and cook for 2-3 minutes, until crisp-tender. Stir in butter until melted and coated evenly.

  4. Serve chicken with sugar snap peas on the side. Enjoy!
