Ingredients

  • 4 medium-sized beetroots, cooked and cubed
  • 200g feta cheese, crumbled
  • 300g asparagus spears, trimmed and blanched
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves, torn (for garnish)

Instructions

  1. In a large bowl, combine the beetroot cubes, crumbled feta cheese, and blanched asparagus spears.

  2. Drizzle the extra virgin olive oil and balsamic vinegar over the salad. Season with salt and pepper.

  3. Toss gently to evenly coat all the ingredients.

  4. Transfer the salad to a serving platter or individual plates.

  5. Garnish with torn basil leaves.

  6. Serve the salad immediately and enjoy!
