Ingredients

  • 4 large potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup chopped chives
  • Salt and pepper to taste
  • 2 cups coleslaw mix
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Scrub the potatoes clean and poke holes with a fork. Bake for 45-60 minutes until tender.

  3. While the potatoes bake, prepare the slaw. In a bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, sugar, and salt and pepper to taste. Mix well.

  4. Once the potatoes are baked, slice them open lengthwise and fluff the insides with a fork.

  5. Top the potatoes with shredded cheddar cheese, sour cream, bacon, chives, and a spoonful of slaw.

  6. Serve hot and enjoy!
