Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 2 cups fresh rhubarb, sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup sliced almonds (optional)
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 375°F (190°C). In a large bowl, combine the flour, sugar, and salt. Add the cold butter cubes and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.

  2. Press the dough into a 9-inch tart pan, making sure to evenly distribute it on the bottom and up the sides. Chill in the refrigerator for 15 minutes.

  3. In a separate bowl, combine the sliced rhubarb, sugar, cornstarch, vanilla extract, and ground cinnamon. Mix well to coat the rhubarb evenly.

  4. Remove the chilled tart crust from the refrigerator and pour in the rhubarb mixture, spreading it out evenly.

  5. If desired, sprinkle sliced almonds on top for added crunch and flavor.

  6. Bake in the preheated oven for 40 minutes, or until the crust is golden brown and the rhubarb is tender.

  7. Remove from the oven and let cool before dusting with powdered sugar.

  8. Serve the French Rhubarb Tart at room temperature and enjoy!
