Ingredients

  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a bowl, combine cottage cheese, eggs, flour, breadcrumbs, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper. Mix well.

  2. Heat vegetable oil in a frying pan over medium heat.

  3. Scoop a tablespoonful of the cottage cheese mixture and drop it into the hot oil. Flatten it slightly with the back of a spoon.

  4. Cook until golden brown, then flip and cook the other side until crispy.

  5. Remove from the pan and drain on paper towels.

  6. Repeat with the remaining cottage cheese mixture.

  7. Serve the cottage cheese fritters hot with a dipping sauce of your choice.
