Ingredients

  • 8 oz orzo pasta
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the orzo pasta according to the package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.

  3. Add the spinach to the skillet and cook until wilted.

  4. Add the halved cherry tomatoes, cooked orzo, salt, and black pepper to the skillet. Stir well to combine.

  5. Cook for an additional 3-4 minutes, until the tomatoes are slightly softened.

  6. Remove from heat and sprinkle with grated Parmesan cheese.

  7. Serve hot and enjoy!
