Ingredients

  • 1 large swede, peeled and diced
  • 2 parsnips, peeled and diced
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 cup grated cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the swede, parsnips, garlic, olive oil, dried thyme, salt, and pepper.

  3. Transfer the mixture to a baking dish and spread it out evenly.

  4. Bake in the preheated oven for 30-35 minutes or until the swede and parsnips are tender.

  5. Sprinkle the grated cheddar cheese over the top and return to the oven for another 10 minutes or until the cheese is melted and golden.

  6. Serve hot and enjoy!
