Serves:

Ingredients

  • 1 cup kiwi puree
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1 tbsp lemon juice
  • 1/2 cup graham cracker crumbs
  • 2 tbsp melted butter
  • Whipped cream, for topping
  • Kiwi slices, for garnish

Instructions

  1. In a saucepan, combine kiwi puree, sugar, cornstarch, water, and lemon juice. Cook over medium heat until thickened, stirring constantly.

  2. Remove from heat and let cool slightly.

  3. In a separate bowl, mix graham cracker crumbs and melted butter until well combined.

  4. Press the crumb mixture into the bottom of individual serving dishes to form the crust.

  5. Pour the kiwi filling over the crust in each dish.

  6. Refrigerate for at least 2 hours to set.

  7. Top with a dollop of whipped cream and garnish with kiwi slices before serving.
