Ingredients

  • 4 large flour tortillas
  • 1 cup black beans, cooked
  • 1 cup corn kernels, cooked
  • 1 bell pepper, thinly sliced
  • 1 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cilantro, chopped
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine black beans, corn, bell pepper, red onion, avocado, cherry tomatoes, cilantro, lime juice, olive oil, chili powder, cumin, salt, and pepper. Mix well.

  2. Warm the flour tortillas in a pan or microwave.

  3. Divide the veggie mixture evenly among the tortillas, placing it in the center of each one.

  4. Fold the sides of the tortillas over the filling, then roll them up tightly.

  5. Cut each wrap in half diagonally and serve.
