How To Make Rhubarb & Custard Scones

These scones are a delightful combination of tangy rhubarb and creamy custard. Perfect for a sweet treat!

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, diced
  • 1 cup chopped rhubarb
  • 1/2 cup custard (store-bought or homemade)
  • 1/4 cup milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Add the cold butter and use your fingertips or a pastry cutter to cut it into the dry ingredients until the mixture resembles coarse crumbs.

  4. Stir in the chopped rhubarb.

  5. In a separate bowl, whisk together the custard, milk, and vanilla extract.

  6. Make a well in the center of the dry ingredients and pour in the custard mixture. Stir until just combined.

  7. Turn the dough out onto a lightly floured surface and gently knead a few times to bring it together. Do not overwork the dough.

  8. Pat the dough into a 1-inch thick round and use a biscuit cutter to cut out scones. Place them onto the prepared baking sheet.

  9. Brush the tops of the scones with a little milk and sprinkle with sugar, if desired.

  10. Bake for 18-20 minutes, or until golden brown.

  11. Allow the scones to cool slightly before serving. Enjoy!
