How To Make Vegan Jambalaya

This spicy and flavorful vegan jambalaya is a Cajun-inspired dish filled with vegetables, rice, and spices.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 bell peppers, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 cup long-grain rice
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 cup diced vegan sausage
  • 1 cup diced okra
  • 2 green onions, sliced

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, bell peppers, and celery. Cook for 5 minutes until softened.

  2. Add the garlic and cook for another minute until fragrant.

  3. Stir in the diced tomatoes, vegetable broth, rice, Cajun seasoning, paprika, thyme, oregano, cayenne pepper, salt, and pepper. Bring to a boil.

  4. Reduce heat to low, cover, and simmer for 20 minutes until the rice is cooked.

  5. Stir in the vegan sausage and okra. Cook for an additional 10 minutes until heated through.

  6. Serve hot, garnished with sliced green onions.
