How To Make Tomato & Chorizo Rice
A flavorful and hearty rice dish made with tomatoes and chorizo sausage.
Serves:
Ingredients
- 1 cup long grain rice
- 2 cups chicken broth
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 6 oz chorizo sausage, sliced
- 1 can diced tomatoes
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a saucepan, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened.

Add the chorizo sausage and cook until browned.

Stir in the rice and coat well with the oil and sausage mixture.

Add the diced tomatoes, chicken broth, paprika, salt, and pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.

Fluff the rice with a fork and garnish with fresh parsley before serving.
