How To Make Sweetcorn & Courgette Fritters
Delicious and crispy fritters made with sweetcorn and courgette, perfect as a snack or appetizer.

Ingredients
- 1 cup sweetcorn kernels
- 1 cup grated courgette
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 green onions, chopped
- 1/4 cup chopped fresh parsley
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 2 tbsp vegetable oil
Instructions

In a large bowl, combine sweetcorn, grated courgette, flour, Parmesan cheese, green onions, parsley, baking powder, salt, and black pepper.

Stir in beaten eggs until well combined.

Heat vegetable oil in a large skillet over medium heat.

Drop spoonfuls of the sweetcorn-courgette mixture into the skillet and flatten slightly with the back of a spoon.

Cook for 3-4 minutes per side, until golden brown and crispy.

Transfer fritters to a paper towel-lined plate to drain excess oil.

Serve hot as a snack or appetizer.
