How To Make Sweetcorn & Courgette Fritters

Delicious and crispy fritters made with sweetcorn and courgette, perfect as a snack or appetizer.

  • 1 cup sweetcorn kernels
  • 1 cup grated courgette
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, chopped
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • 2 tbsp vegetable oil


  1. In a large bowl, combine sweetcorn, grated courgette, flour, Parmesan cheese, green onions, parsley, baking powder, salt, and black pepper.

  2. Stir in beaten eggs until well combined.

  3. Heat vegetable oil in a large skillet over medium heat.

  4. Drop spoonfuls of the sweetcorn-courgette mixture into the skillet and flatten slightly with the back of a spoon.

  5. Cook for 3-4 minutes per side, until golden brown and crispy.

  6. Transfer fritters to a paper towel-lined plate to drain excess oil.

  7. Serve hot as a snack or appetizer.
