How To Make Smashed Roasted New Potatoes

These crispy roasted new potatoes are smashed to perfection, creating a deliciously tender and flavorful side dish.

  • 1.5 pounds of new potatoes
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish


  1. Preheat the oven to 425°F (220°C).

  2. Place the potatoes in a large pot with enough water to cover them. Bring to a boil and cook until the potatoes are fork-tender, about 15 minutes.

  3. Drain the potatoes and let them cool slightly. Place them on a baking sheet lined with parchment paper.

  4. Use the bottom of a glass or a potato masher to gently press down on each potato to smash them.

  5. In a small bowl, mix together the olive oil, minced garlic, dried rosemary, salt, and pepper. Drizzle this mixture over the smashed potatoes.

  6. Roast in the preheated oven for 15-20 minutes, or until the potatoes are golden brown and crispy.
