How To Make Ruby Tuesday Quesadilla Recipe

Ingredients

  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp olive oil
  • 1/4 tsp chili powder

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a bowl, mix together shredded cheese, tomatoes, green onions, cilantro, and chili powder.

  3. Lay four tortillas on a non-stick baking sheet.

  4. Divide the cheese mixture evenly among the tortillas.

  5. Top each one with the remaining four tortillas.

  6. Brush the tops with olive oil.

  7. Bake in the preheated oven for about 15-20 minutes or until they are golden brown and cheese is melted.

  8. Cut quesadillas into wedges and serve with salsa and sour cream.
